Sinuglaw or sinugba + kinilaw (grilled pork belly and fish ceviche), to me, is one curious, interesting, weird but delicious dish. I mean, look, you have raw fish salad mixed with charred meat and then embraced together by vinegar, tabon-tabon and a colorful, merry mix of ginger, onion, chili and other spices. Party in your mouth!

The Sinuglaw Festival 2014 CDO is a signature event of the Cagayan de Oro Hotel and Restaurant Association (COHARA) and a prelude its yearly-flagship event, KUMBIRA a.k.a. the largest culinary competition in all of Mindanao.
The Sinuglaw Festival CDO event aims to feature the local dish in various hotels and restaurants around the city and at the same time promote it as a truly Kagay-anon dish to guests, tourists and locals.
